Salsa de Sorpresas

That means surprise in Spanish....And the surprise is the rhubarb from my backyard that adds a tangy kick to this suprinsingly colorful and fun salsa....

1 diced yellow pepper

1 diced orange pepper

1 bunch cilantro chopped

6 tomatoes diced

2 stalks rhubarb chopped

1/2 medium purple onion diced

3 cloves garlic minced

salt and chili pepper to taste

I made this up in my food processor...so colorful..we are having it on spanish rice and refried beans tonight!!
