I'm kind of breaking away from the normal use of this blog and decided to set up a recipe blog so anyone can see what exactly this crazy family eats every day. We are very consistent and dedicated to good health. We have a unique way of eating that has brought us health and happiness.

Breakfast: oatmeal

Lunch: Red lentils and rice ( I cooked them together and added a bunch of different types of herbs..sage, parsley, coriander and garlic powder. You can basically put in any herbs you want...red lentils cook up very creamy...I love lentils)

sides: baby carrots ..I'm kind of being stubborn in the veggie dept. I didn't buy many this week because we should have some from our garden in a couple of days...

Dinner: Lentil Mexican Casserole (this is kind of similar to one I made last week..layers of corn tortillas that I broke up by hand, tomato sauce seasoned with cumin and garlic, cheese, frozen corn and of course the lentils and rice from lunch...my kids LOVED it)

The lentils and rice is a great filler food for casseroles, wraps, I know some people make salad type meals with them. I've made lentil burgers many times but Sasha stopped liking them and the kids are happy eating them in the non-burger form...which is much easier.

It is also a DIRT CHEAP meal..I haven't done the math exactly but when you buy in bulk (even with the rising prices it is still cheaper to buy in bulk if you are disciplined enough to eat your bulk food). For LDS people out there this is such a great food storage food. I like beans but I am so bad about remembering to soak them and then never seem to have time to cook them the next day if I don't soak them. I go through phases of being good about beans and bad. Lentils are so easy..no soaking...they cook in roughly 30-40 minutes.  And they can be enjoyed with almost any spice or herb you like...very versatile.

Oh my...thanks for the reminder...I didn't notice I'd fallen behind. It was a big holiday in Utah yesterday..pioneer day and Sasha needed babying after the marathon..so I got a little airheaded. I'm so glad you like the blog. I will probably keep doing it for a month or so and then pick it back up again a few months after the baby is born.

I didn't even know there were different colored lentils! Sarah, you are an amazing cook. I should try the lentils because we've been cutting down our meat intake and we need the protein. And beans are just such a pain to cook!

Yes..yes yes...beans are a pain and in a perfect world they would be more like lentils..Lentils are the lazy man's beans. I LOVE them. I would still however like to be better at beans. I'll bet I could get Sasha to write me a program that reminded me to soak the beans. He's funny about that...he seriously offers to write a cron demon program to automate things for us. I can just hear the computer now every Tuesday night at 9:00 in Sasha's voice saying..."Sarah..don't forget to soak the beans."

Hahaha! A pressure cooker may help. I did pretty decent beans on Tues. in just 2 hours with my pressure cooker. So I started at 3 pm! Boil, wait an hour, pressure cook for 40 min. and then just let cool off. Beans and rice is a favorite dinner over here these days--and it is all from your recipe.
