I'm kind of breaking away from the normal use of this blog and decided to set up a recipe blog so anyone can see what exactly this crazy family eats every day. We are very consistent and dedicated to good health. We have a unique way of eating that has brought us health and happiness.

Breakfast: Oats and milk 

Lunch: Adzuki beans and barley

Dinner:  Mexican lasagna (adzuki beans, barley, tomato sauce, corn tortillas, cheese on top, mexican spices in sauce)

bought the kids animal crackers and 100% fruit fruit snacks at good earth

Breakfast: Oats and milk

Lunch; Pita Pockets

(homemade pita pockets stuffed with adzuki beans and barley, garden tomatoes, salsa and cheese)

Dinner: Raisin Bran...needed something easy..making pita pockets is more involved than I usually do..although it was pretty simple it just adds more time and more clean-up.

I have some kind of exciting news. I was contacted by the director of diabetic research at New Mexico University today. They are putting together a cookbook for diabetics as part of their extension services and wanted to use some of my recipes. It kind of gave me a kick.

Breakfast: oats and milk

Lunch: Picnic in Salt Lake with my sister and her 5 kids. We had bean burritos, baby carrots, baked cheetos and apples. It was a free lunch program for kids they do during the summer. (to make sure kids are fed by their parents during the summer I guess?? )

Dinner: Apricot Muffins and Pina Colada Banana Smoothies.

I got a million apricots from a friend..made it into a bunch of syrup..that I planned on using on top of waffles. My kids don't really like the syrup so I used it to sweeten and liquify the muffin batter I made this morning. Worked like a charm.

Then I went to my favorite store this morning and they had my dream come true...a box of bananas(like 25 pounds or so) for $6.00..yay!!! I also bought some juice for cheap and we are going to have smoothies and banana bread galore this week.

Breakfast: oats and banana smoothies (we will be having lots of banana things this week to eat up our bananas) I will also freeze some of them. Then I put them frozen in our K-tec awesome blender and it creams them into an amazing banana ice cream. I add a tiny bit of soy milk to it and that's it. It's really sweet and creamy.

Lunch: Tuna Sandwiches

We now have an overload of bread. I went to my favorite store in Salt Lake yesterday that sells the bread we buy at Costco for 3.00 for only 1.00. I've stocked up and am very happy. We really don't eat sandwiches very much because it's a pain to bake that much bread and it's expensive to buy the kind we eat. Also I still feel like I get more full and feel better after a cooked meal with whole grains, beans or meat. But if I have the bread and it needs to be eaten I'm happy to have a easy meal of sandwiches. Maybe we'll have French Toast for dinner tonight...we'll see...I'm still deciding.

Dinner: Pasta and baby carrots...soccer season is here and I need to get organized. It should be better this year because his practices are at 7 at night instead of the insane hour of 5...dinner time..or dinner making time at least. 7 will be great and then there's the games to figure in but Daddy helps out a lot by taking Benjamin to a lot of the games so that helps.

Breakfast: Peach Cobbler....I LOVE August and I love Allred's fruit stand in Provo that sells me a huge box of peaches for $6.00. Someone amongst the craziness of going to a water park in the afternoon and soccer in the evening I managed to whip up some peach cobbler. We loved it for breakfast this morning and I'm sure it will be gone by noon tomorrow.

Lunch: Yummy Supreme Harvest Blend (this would be lentils and rice topped with a fabulous garden sauce- I sauted garlic and onion in some olive oil and added tomato sauce, chopped zuhcinni, squash, and green beans. It was delicious)

sides: Yummy Supreme Havest Salad- chopped squash, zuhcinni, cucumbers, and tomatoes with a light olive oil/garlic dressing...superb.


Dinner:  Banana Pancakes and banana/peach  smoothies.

Breakfast: Oats and Milk..the peach cobbler lasted until noon yesterday...I'll be going to get more peaches today. I was a good girl this time and actually got some in the freezer.

Lunch:   PB and J sandwiches

Dinner: Lentil and Rice Soup
